I disagree with these first few answers, Im relatively sure it was because peas grow quickly, thus he could study many generations in a relatively short period of time. which is great for researchers.. this is why the fruitfly (D. Melanogaster) is one of the best and most well studied organism in bio research... cause it reproduces very quickly and one can see multiple generations rather quickly

He used green peas because:
it is convinient to use

Well, he was monk if I remember correctly, and back then monks grew their own food. So he probably had a steady supply.

They are also a simple organism, easy to cross pollinate with one another because of their blossoms.
