Think typing refers to the skill in general, where as touch typing is a specific way of inputting the characters. "Typing" certainly used to involve more that the physical inputting of characters, such as copy-typing (creating an accurate copy of "text")
There would also have been shorthand typists, who translated/typed up shorthand, not any easy task from what I've read.
touch typing is were you've memorised the layout of the keyboard, so you don't need to "hunt and peck" (ie look for the key you want on the keyboard) It usually additionally includes learning to use ALL the fingers, on both hands to type with.
There's a fair number of single finger typists, who use caps Lock for capitals, but are forced to use shift with their other hand to get exclamation marks etc. Some people are two finger typists, who use 1 finger on both hands. Then there's are people who use more fingers, up to the full range.of fingers like in touch typing, but they look at the keys before/while typing.
If I concentrate I probably "touch type" about 50% of the characters I type. I find it quite awkward to use my little fingers but, am slowly getting used to using them.
You are usually forced to touch type with a chord keyboard, as its very difficult to label the keys.

As many have already stated Touch typing is where the typist doesn't need to look at the keys whilst typing.
To add an extra piece of information on most keyboards the F key and the J key have a raised bit to help the touch typist to recognise them without looking. These two keys are called the home keys as they are the starting keys for your index fingers.
The machine you see in courtroom dramas is a special type of typewriter it doesn't use the normal alphabet it types in shorthand The operator of this machine is called a stenographer

Typing is generally considered to be looking at the keyboard, while you type, so as not to mis-strike a letter. Touch typing is being able to read the material that you are typing, or to watch the screen in keyboarding, and not having to look at the letters.

Touch typing is being able to type without looking at your hands and is usually very quick! I can touch type but its taken years of practice - think about when you text, can you do it without looking yet?

its a stupid name if u ask me cos normal typing envolves touching the keyboard too so why call it touch typing??
