You can end it with whatever you want. If your writing an apology letter than yes (sincerely) or sincerely works for almost anything.

If its a butt kissing letter than faithfully


Of a straight up "thanks for everything" is fine
or

Thanks
until the pen hits the paper
all that is noted
best regards
see you later
yours truly
sincerely yours
regards
will keep in mind
best of luck
see you in class


and so on, maybe you get the picture. It can be anything but keep it realistic with your letter or e-mail.

If you don't know the name, yours sincerely. If you do, then yours faithfully.

"Sincerely" is sufficient.
