Larry Fitzgerald is the only given on the list. No decent CB on him, he should rip the secondary up.
Don't even think about Vincent Jackson. He's not a great receiver and he's facing a great defence in Chicago. No way.
Joey Galloway is interesting. He can still burn guys, but he's also losing that X Factor. Marcus Trufant is good enough to shut him down.
I'd say Curry and Fitzgerald, but Evans when he doesn't have the best corner in the league on him.

Well, Lee Evans, and Larry Fitzgerald are your two impact receivers so I would go ahead and start them because they are basically guaranteed at least a decent game. The player with the best matchup (Curry) is not going to get much with that Raiders offense. Fitzgerald's matchup is good and Evans is going to get the most looks for Buffalo so I would go with him even though he is going up against an above average defense.

Because you only have 2 starting spots at WR, you should trade some of your excess WRs to strengthen another position at which you are weak. There is absolutely no reason why you shouldn't start Evans and Fitzgerald every week (with the exception of their bye week or if they are hurt and going to miss the game)

I would have to go with Evans and Fitzgerald. They are both studs and should play well. Even though evans is going against Champ Baily, he should get his touches and find the endzone
