The key is fundamentals.
1) Hips don't lie.
You can get faked with the head, shoulders or feet. But the body has to go somewhere. The advice of those above me, watching the belt or belly button, is good.
2) Don't hit a bull in the horns.
Smaller players may be able to be tackled high, but true running backs can break tackles with power up high. Hit low on those big guys.
3) Remember what the Fabulous Thunderbirds sang.
Wrap It Up, I'll take it! Have to finish all your tackles by wrapping up legs or body of the ball carrier.

Do not hit with your head down unless you wish to risk walking again.
Put your head on the ball and wrap your arms. It seems that making the Sports Center highlights has made players look for the big hit instead of tackling with proper form. How many times have you seen a potential tackler bounce off when their arms weren't wrapped?

Watch their hips. You can get fooled by the feet or the eyes or a head juke, but they can't swing their hips in every direction. Back in my day as a linebacker and corner, I would follow the player, but as I closed in for the tackle I looked at his belt buckle or any point on his midsection. You can look him in the eyes when he is laying on his back.

Put your head on the ball ("bite the ball"), wrap your arms around the persons waist or legs (dont tackle up high), and be aggressive. If you arent aggressive you are just gonna get run over.

The key is to hit the guy with your chest first.
#1) it's a safety thing, you won't hurt your neck.
#2) if he spins away from you, some part of your body will still be in contact.
#3) it will teach you to wrap up because you'll have your arms on either side of him.

To make a good open-field tackle, aim for the legs. If you take out their balance, they'll fall for sure.

hi with your head down and hit them square on and hard. Act like every play is the winning play of the Super Bowl. Always play with heart and never forget where you came from no matter how big and famous you get. Always play for the love of the game not the love of money.
