I had put in an application for a job and I went to an interview with the head boss and I got the job and I was suppose to come back in wednesday for my schedule and to bring all my documents. I start friday. So the manager (not the head boss) called me today to come in wednesday but she said for an interview. I'm thinking maybe she made a mistake or do I actually need to be interviewed twice. Because when you come in with documents and get uniforms I though it was called an orentation or training. So my question is .. has anyone applied for a job and had to get interviewed twice ?

I have had at least 3 interviews for one job and 2 several times.
Usually you have the job if you get a second interview but the one I had 3 I didn't get the job.
Since they asked you to bring documents they want to be ready to hire you and have you start but just had a new person for you to talk to or had to decide just how to make the best use of your skills.

Firstly multiple interviews are common, often at senior levels or if there are many applicants.

I wouldn't start a job until I get a job offer in writing.

Some times different managers want to put their hand in the process, so they offer you the job, then their manager says that they must meet you before they approve you.

Here it sounds like the head boss appointed you, but the manager wants to make their own appraisal of you.

The simple fact is that they have made a job offer, you have made commitments to that job, so if they then cancel, they are in breach of contract and are liable to pay you some compensation (but suing them is not worth it).

Anyway, sometimes for work you have to put up with the bullshit. But be careful, I have had jobs where a senior manager has imposed me on a department without their approval, so I get treated badly because it is easier to treat me that way than actually stand up to their manager.

Yes that's normal. Once you get the second interview it is a good sign. Most drop out after the first one.
