I always wash the shirts inside out and use fabric sheets.

they are 100 0/0 cotton, and I turn them inside out. I am using the same soap for many years. The only thing different is the water temperature. I have been trying cold water, wash and rinse and before warm wash, cold rinse. Before the water came from a well and now is coming from a river.

Try not using fabric softener sheets. Instead... Try adding a cup of white vinegar to the rinse cycle when washing.

Are they a poly-cotton blend? If so, you may have lost enough of the cotton to cause the poly to start pilling.
Also, are you washing them with like colors? Dark tees washed with light towels (or other linty items) or vice versa can lead to lint transfer which could make pills more prominent.

Maybe it is the detergent, maybe use a milder one.
