The best one I played so far is Dragon Quest VIII. Its your traditional turn-based RPG from Square Enix. The game has a nice story and symphonic musical overture. Also the graphics are cartoon cel-shaded, so its really nice to look at. This game usually takes about 70 hours +, depending if you completed the mini quests also. If you like the Final Fantasy series, you can play Final Fantasy X (About 60 hours +). Final Fantasy XI is slightly distinct from the rest of the pack, since it is now an online MMORPG. I didn't get to really start off in FFXI since you have to pay $12.99 a month and need the hard drive for the PS2 version. Final Fantasy XII is a great game and G4's X-Play gave it a 5 out of 5, but it doesn't really appeal to me.

The RPG I'm playing right now is Shin Megami Tensei: Persona 3 and I have to say that this game rocks! I played the last two Personas, and have to admit that this one is the best of the series. Its not your typical RPG, and is much more oriented towards adults (although the setting takes place in High School). Nice jazzy-lounge, hip-hop soundtrack, with amazing visuals and design. P3 is kind of different, where the game progresses with an event-drivin' sequence, instead of having linear gameplay. During the day, you go to school and take place in various social activities such as hanging out with friends, going to the mall, and eating at a restaurant (to improve your stats). Then at night you fight at the dungeon known as Tartarus. Seems kind of off, but you get the hang of it. I would really recommend this game. As for the game duration, I predict that this game will take me over 150 hours +, since I'm taking my time and leveling up a whole lot (In the box, its says 70 hours +).

Dragon Quest 8 is a great turn-based RPG. you can create weapons, armor, and items using an alchemy pot, the storyline is interesting and sometimes humorous, and the cel-shaded graphics are sublime. If you tackle both endings and the Dragovian Trials, you'll dedicate 100+ hours to this game.

Dark Cloud 2 is a fun action RPG. You can invent items, you get to see the weapons evolve, and the minigames are fun and addictive. With a final "hidden" adventure after beating this game, there is lots of gameplay.

Final Fantasy 10 and 12 are great turn-based RPGs. Always a quality franchise, both games are great fun. And if you go for 100% completion, you can plan on sinking many hours in both games.

Enjoy!

I would recommend Kingdom Hearts 1&2 and Final Fantasy X, X-2, and Dirge of Cerberus. Odin Sphere is also a good game. Also, Square Enix makes good rpg's for the PS2 so try to look for them.
