We plan on crossing Alberta into Montana and eventually into Arizona with potatoes, carrots, and such. Are there restrictions on this?

Check the web pages for the Department of Agriculture in each state you're crossing. I live in Califonia, and it would definitely be illegal here (fear of transfer of pests). I know that Arizona is another state that is very worried about allowing people to bring in out-of-state produce. Don't know about the others.

Of course there are. Everythime I cross the boarder they ask if I have any produce, on both sides!

Leave the veggies at home.

Granted, if they catch you with them, they will just take them. I can't imagine you would really get in trouble.
