Remember, Douglas Adams is a fiction writer.
And while it may be an interesting (and possibly true) hypothesis, we will never know - if no one ever learns the truth the universe doesn't end, and if someone does learn the truth we'll all be gone.

If you think into it more then you can see that it is not really a theory but means after discovering the mysteries of what the Universe is and why it is here, then because the universe is such a large place it will be replaced by more complex mysteries that we have never thought of before. One more discovery brings in a whole lot of new questions, this is what fuels the essence of science.

This is one theory that I believe to be untrue. Everything about the universe is allready so complicated so to try and make it even more complicated does not hold up.
Everything, and it is actually not much, that we know about the universe does not even remotely point to this possibilty.

Well, that would be a hypothesis, not a theory.

And to me it sounds pretty ridiculous. I don't see how simply understanding something could cause it to magically disappear.
