Just so you don't think I'm copping out by sending you to numerous web pages, let me try to give a rundown of the stack.
In Ultimate, when on offense, the thrower has easiest throws into a couple of areas. These two areas are, basically, to the left and to the right of the marker (defender covering the thrower). The area extends as far downfield as the thrower is able to throw. If the entire offense ran into these two areas (which you see with novice games a lot), it makes it very hard to get a good, un-defensable throw off. It's hard to focus on one teammate, and because every offense player brings along a corresponding defender, there are more defenders milling around in there. Ideally, the thrower would have one teammate running into this "sweet spot," relatively open.
As the thrower, when you face the marker, you will notice that the area behind the marker is hard to get a clear view of - much less get a solid throw into. Since this downfield area is less likely to have a pass thrown into it, why not put the majority of offense into this area? From here, when someone is ready to run to get open for a pass, they initiate their cut. If they make their cut and don't get the pass, this area is also where they retreat to and reset for the next opportunity. That's the logic behind the stack.
When do you get into a stack? Pretty much all the time when your team is on offense. As your team first receives the pull, you can try to run to an open area to get a pass. Usually within one or two passes, if you haven't gotten the disc, you'll want to recognize where the appropriate area for the stack is and get to it. (Again, it's the area facing the back of the marker. As your experience and field sense increases, you'll discover that there are exceptions to this. But for now, go with the "defender's back" strategy.) From the stack, you can make cuts for the current thrower. . . or if your field-sense is good, set up and make cuts for the second or third pass from where the thrower currently is. ("If teammate A gets the pass on this cut, then I should cut _there_...") Keep in mind that aside from running toward the thrower, cuts can also be away. For this reason, the stack should be careful not to be too spread out. Again, this is because for every offense player there will be a defense player looking to make a block on a pass. Nothing is more frustrating that making a great long cut, dusting your defender, only to have a teammate's defender shut down the long pass opportunity.
If you ever find yourself in a position where you might be running across the throwing area to get back into the stack, stay alert to see if you're about to disrupt a teammate's cut from the stack. If that's the case, then run hard, away from that cut. Sprint for the endzone. Or, continue your cut away form the stack. even if it means you're going behind the thrower.
Watch your team, your opponents, and other teams and how they all play this concept on the field. One can learn a lot by watching.
Last advice? Continue to play a lot, talk to your teammates a lot, share knowledge, and ask questions. It's not unusual in Ultimate for your opponents to be as informative as your teammates. After all, the more people that play well, the more fun for all!

Stack usually refers to a type of offense where receivers play at different depths (short, middle, deep) and make sharp cuts to get open. Essentially, the basic idea of a stack is to get a defender to screw up which causes an open receiver and an easy throw. It is fairly easily defended with a simple zone defense and is only really effective when the other team is playing man to man.
