Make sure they are ready first. The backs of the flowers should be brown to black and the seeds will be plump with black stripes on them. After you are certain they are ready then cut off the flowers and rub the seeds out with your thumbs.

The seeds are tough enough to simply scrape out with a butter knife as long as you dry the flower completely first.
