Am i correct in thinking that one H2O molecule = 1.5mol
therefore, 18H2O molecules simply = 18 * 1.5?
giving me a final answer of 27mol?

As Al2(SO4)3.18H2O is equal to 1 mole. (Molecule).
Then 1.5 moles (molecules) will contain 1.5 x 18 = 27 moles of water.
