what classes should i take if i want to work with aircraft, and want to have a carrer working with them or even flying them

If you're taking the college route as opposed to the Air Force route, I'd say you need to look at engineering.

For freshman and sophomores, this means courses in calculus, physics and chemistry, as well as other general requirements. Later in college you're going to want to look at mechanical engineering as a major, or perhaps aerospace engineering if your school offers something that specialized.

Take a look at the specific course requirements for engineering majors on your school's website and that will give you a more specific idea.
