The rest is just proper diet and hard work. Remember that their job is their body. Whereas many Americans spend 9 hours a day at a desk, they spend their time training. They spend countless hours in the weight room. They have nutritionists telling them what to eat and how much.
They have personal trainers in the offseason that maximize their workouts.
Put both of these factors together and you have the recipe for a pretty strong dude.
Of course, just about anyone can increase their own physique with hard work and proper training. If you are willing to put in the time at the gym (hours a day) and willing to eat right, you can add muscle as well (assuming you are not too young or too old -- ages 15-45 is about the range you can expect decent results from weight training with less results at the ends of the spectrum).
