yes i do. i usually cut the eggplant into smaller pieces and then fry some onion and then put in the eggplant. after that, use some paper towel to absorb the oil from the eggplant and serve.

Yes. I bake them sometimes. I've even dipped them in egg, then into bread crums & fry the slices almost like a pancake
.I have boiled them with ham or ham hocks added sweet basil, onions, a little lard, green pepper.
They same recipes that call for squash, I substitute eggplant.

I've never eaten eggplant - just doesn't appeal to me I guess. Good luck if you are trying to prepare one though!

Never ate it and never had any desire too! until now I guess I`d try that Parmesan eggplant! prepared by some one who knew how to cook it????
