Check the link I listed below. I did this training through the company I work for, but on their website it says they have online training. You could also search food safety certification and see what other companies have to offer. Good luck with the restaurant.

Investigate the regulatory requirements, both city and state. Prepare for a plethora of paperwork, including byzantine building codes with regulations covering everything from kitchen exhaust systems to interior finish requirements.

basically if you contact your city and staqte government for more information, they will ahve all the information you need to apply for safety, set up appointments with inspectors (both safety, code and health), etc. If you dont feel comfortable doing that, you could probably just go to a local restaurant and ask them what the certification is called and the location of the class/test.

dont forget about health permits, application requirements (from the city/state), licenses (ie alcohol amounst other things , there are at least 4 types), insurance, etc

there are lots of books out there on how to start your own resturant, you may want to check out some of them .at the very least all the info you are looking for, you should be able to find by contacting your state or city offices.

Your imaginary restaurant doesn't need a food safety certificate.

I don't know where you live, but I have Serv-Safe and HACCP certificates. I didn't need them, but showing them to the health inspector made everything easy to get my permit. Every inspection was like "You're OK, here's your new permit." Check out those two courses, they're easy, it's all common sense.
