In the South of Italy, try Positano, on the Amalfi coast not far from Napoli, or you could go to Capri, also nearby.
In Sicily, between Messina and Catania, is Taormina, a lovely place.
In the South of Spain, try Sevilla. It's a great city and you could take excursions to Ronda, Corboba, and some of the "white villages" of Andalucia.
On the coast, try Alicante or Marbella. I think the sunshine will be warm and toasty but the Med. Sea is chilly to me even in July/August since I'm in Florida.
In Portugal, Lisbon is beautiful and it would be nice to go deluxe there. It would be warm, but not hot.
Look in the Lonely Planet Guides to Europe, Spain, Italy, etc. for great recommendations for hotels. All price ranges, but the deluxe ones tend to be ones with character or history more than typical chains.
