A Yorker is a lethal and wicket taking delivery.
Where as a bouncer, it is hard to take a wicket unless the
batsman tries to hook/hit the ball. Many players leave it alone
when a bouncer is bowled. But the bouncer can be lethal
from a body line perspective and not wicket taking.
On a Yorker bowled straight on the wickets, the batsman has
to block it or step in forward to convert it to full toss.

generally bouncers can be left by batsman without hitting. but the yorkers should be played by the batsman. so there is maximum chance of getting out with a perfect yorker.

yorkers as they can be hard 2 play
bouncer doesn't really take wickets unless the batsmen judges it wrong and is possibly caught.

Bouncer of course, provided it's well directed but yorker too can be lethal when it is combined with reverse swing.
