Ammonium sulphate is used in agricultur spray adjuvant for water soluble insecticides , herbicides and fungicides.
There it functions to bind iron and calcium cations that are present in both well water and plants cell.
It is particulary effective as an adjuvant for 2,4-D (amine), glyphosate and glufosinate herbicides

For metals , it depends on the type of metals you add. If you add sodium Na, it can increase the content of OH- and increase the pH . if you add gold, there will be no effect . So, no general rule. Ammonium salts it depend on the anion. If you add chloride you can increase the quantity of H+ and lower the pH
