Molokheya is probably the only Egyptian dish, that only Egyptian can do it the Egyptian way !!
I am serious. I traveled allover the world (except Americas) and tasted so many foods, but never ever found something that require a touch of personal spirit while cooking like Molokheya, we call this in Arabic "Shah2a".
only two people could cook Molokhey for me, My grandmother but she died, Allah yer7amha. and My wife, but she is not yet 100% consistant, but I give her the execuse as she cannot get all the material she needs ( we live in a western country).
The problem you will face when visiting is:
1. Molokheya is not something you find in restaurants usually (proves my point of personal spirit thing)
2. It is not also always common to invite someone for Molokheya. again because different people have different tastes and some people may not like how Molokheya is cooked somewhere else.
But for you, you can ask a friend to make it for you and make sure it is done or supervised by an experienced old Egyptian mother (preferably Grandmother).

Here is my way to do it. Have chicken broth or cube dissolved in water, try to have it not too thin. Put the molokheya in the broth and heat it not to the boiling point. Prepare crushed garlic, mix it with dry coriander. Fry this garlic mixure in some oil, not much. When it changes its color add it to the molokheya. That is all. It requires no cumin nor ginger. I also like to add to the soup before the galic mixure one chopped tomato( optional). I eat it with rice and chicken, rabbits, ducks et. In case you prepare your own chicken soup make sure to add cardimom for a nice smell, then fry the chicken in oil after drying it.

It is a very nice green soup to be eaten with rice, bread, salad and chicken, rabbits, birds or in the north coast with shrimps. Other dishes are koshary, fatta, foul and falafel, shawerma, kabab and kofta, mosakaa to say the least.

yes molokhaia is very good , don't even get close to bosara eww , zoser just didn't get much sleep .
also try kabab , hamam mahshy , fatah , mahshy .
