When agreeing to a contract in the UK, is it necessary to sign all pages in the terms and conditions?

I frequently rent/lease cars and property in the UK and whenever I rent something I always have to sign all pages in the Terms and Conditions. I recently rented a car and after my rental the car hire company want to apply an administration charge which is not on my signed Terms and Conditions. They are citing a clause in my signed terms and conditions that I agree to any other terms and conditions the company may impose. Can they legally do this and is it enforceable?

The hire company told me they'll be sending me a copy of these Terms and Conditions so that I can check them however they said they do not have a signed copy of them since I didn't sign them, however they still want to enforce them because they are saying that the fact that I rented the car is, for them, equal to me signing these conditions - even though they were never shown to me in the first place

Affix your signature on all of the pages of the contract so that no page will be substituted to favor the other party in a contract.
