I'm just wondering if there is a certain format we need to follow if we need to write an interview transcript... Please help me and thank you very much. ^^
Oh and... if the interviewee did not speak in proper sentences, do we need to edit whatever they said so that it becomes proper english?

Not really one specific format, but make sure the one you use is clear and used stringently. I usually put the names of those asking in bold, then a : followed by the statement. I put the full names first, then only the last one for the second and following statements. Then, in parantheses and italics, you add any additional information, so that in the end, your transcript looks something like this:
John Doe: So have you always wanted to become an actress?
Angelina Jolie: No, I just wanted any job that would give me loads of attention (giggles)
Doe: And that's why you did all that crazy stuff, blood in a vial around your neck etc?
Jolie: (bursts out laughing) You're a smart man, I must say that.
