Say in Australia and New Zealand it's warm in the months we in North America call winter and cold during the months we call summer. so in Australia are bikinis "winter fashions" or do they think of december as "summer time"?

Interesting question!. In Australia the seasons are defined by the month. Here Spring is Sept-Nov, Summer is Dec-Feb, Autumn is March-May and Winter is June-Aug.

We definitely think of the hot months as "Summer time", and the cold months as "Winter time". Christmas is in the summer time.

The season are defined by the tilting of the earth on its axis, when the North has Summer, the South has Winter, that's because the North part of the Earth is more exposed to the sun than the South part, which is recieving less sun.

They call december 21 the first day of summer, March 21 first day of autumn, June 21 first day of winter, and September 21 the first day of spring. Of course the exact dates may vary a day or two in either direction due to the silly calendar we follow.
