I am looking at paintball stuff and see there is a burst disc for the CO2 cylinders or marker(gun), anyone know what it does?

The burst disk is a safety device. If your tank reaches too high a pressure, the burst disk will break and all the gas in your cylinder will vent in a controlled manner. Without a burst disk, the pressure could build up so high in the event something went wrong - like overfilling - that the whole thing could explode and injure someone.

The burst disk is the safety valve with one big difference. While the safety valve will open and close to control the pressure inside a vessel, the bursting disk will open "burst" to release all the pressure. Once the bursting disk operates it must be replaced.

A lot of pressure vessels, (tanks cylinders etc) will have a section the is designed to rupture in the event of an over pressurization. This is so they know when and where the failure will be.
