i want to prosecute sex crimes... can i start working in that department after i graduate from law school, or how does that work?

Here is how it works:
You get a bachelor's degree in ANYTHING, so long as it is from an accredited university. You go to an ABA accredited law school & get your JD. While you are there, you study your criminal elective courses & participate in as many clinics & trial advocacy programs as possible. When you get out, you apply to state agencies (either criminal prosecution OR criminal defense). You will spend about 5 years doing that before you will be allowed to prosecute a sex crimes case.

You will be working as a public defender for quite some time first before becoming a prosecutor.

Yes, you can, after law school, not the other way around.
