I've heard Lil Wayne has/had one and also Jay Z. I don't know if they're just rumors tho, are there any rappers that have ghost writers?

I think you'll find the vast majority of these so called 'artists' in the charts have all the work done for them. They're OWNED by their record companies and have to do what ever they are told.

Ive had a lot of contacts at the Australian Record company MUSHROOM and Ive heard utterly atrocious story's about big stars having to mow the lawns of their managers to pay back money.

Don't be fooled, pop is purely bubble gum. Its cheap and nasty and loses its flavor quickly so you take another piece.
Your rap artists would do very little writing of lyrics and stuff all of music arrangements.
If a band has been around for about a decade or more and are not pop, then you can be sure they are hard workers that do their own stuff. Look for alternative and independent labels. Big company POP has all but destroyed the music industry.

For sure BowWow's lameas..haha.
But pretty much all the commercialized rappers you hear on the radio have ghostwriters.

Look into the independant artists like Pigeon John, Argyle Pimps (super dope duo out of Fresno, CA), L.A. Symphony, Tapwater, Murs, Aceyalone. These dudes all write their own and even produce their own beats.

Lil Wayne deffinatley has a ghost writter. In his Da Drought 3 Mixtape song, Boom, he says, "I don't rap, i just sh*t like a newborn, I don't WRITE, i just spit like a tooth gone."

And The D.O.C was a ghost writter for Eazy E debut, Eazy Duz It and NWA's 2nd album, Straight Outa Compton.

thats about all i know.
