I have been to the Hyatt Regency San Antonio hotel right on the riverwalk.
It's a really beautiful hotel, even more so during the holidays.
On the bottom floor they have a "river" going through the garden atrium. The service there is 5-star, the rooms are quiet and you get a nice view of the inside atrium and the outside of the hotel as well. If you have kids they'll love the "glass" elevators that go from the lobby up to the 14th (top) floor. I know you're coming in winter, but they have a roof top heated pool and whirlpools.
It also offers dining and a sports bar. The dining is wonderful, you'll get Texas sized breakfasts, lunches, and dinners. You must try the breakfast, it's soooo good. It's a really nice way to wake up in the morning.
When you're not at the hotel there is other things to do since it's right on the riverwalk.
You're close to Rivercenter Mall which is great for shopping. The mall surrounds the man-made river on the bottom floor. They have your normal mall stores, good restaurants, plus your typical souvenier shops. They also decorate the mall for the holidays.

Everyone of the answers above are wonderful choices and you would be very well satisfied by using anyone of them. I will however suggest two things one is a hotel and the other maybe even more important. FIRST Which one you choose is really up to you but no matter which one it is call now and make your reservations for Christmas you will find that you are not going to just pull up and go in and get a room, it might happen, but more than likely you are not going to get a room.
Now my choice would be the Menger. It starts at $129.00 a night. It is the oldest hotel in the city and is just full of history and yet the amenities are fabulous. It is located in the down town area and is very easy walking to the river walk, river walk mall, Alamo, the cultural center, Tower of the Americas, several museums. It is close by the Botanical Gardens, Ripley's believe it or not, and a whole host of other places to visit all very close by. What you are not going to find is the very vanilla hotel room that looks and feels pretty much like the last one that you all stayed in. The service if friendly and prompt, the cuisine is great and many locals stop there for dinner before going to the theater. Dignitaries have in the past and still stay there while visiting our wonderful city. Welcome to San Antonio and have fun and Merry Christmas and Happy New Year

The Marriott Riverwalk would be the best because it is located right at one end of the river. It provides a spectacular view of all the lights on the river. Another great choice is the Westin. It is also on the river plus they decorate the lobby really well. Any hotel on the river at Christmas will be a good choice as all are close enough for romantic walks. You will have a great time!

I like the Omni La Mansion del Rio. I was there back in June. We had a nice balcony view of the Riverwalk and it was just far enough away from all the bars (closer to the Hyatt and Hilton) that ambient noise wasn't excessive. There is a sister hotel directly across the river that is a spa, but the name escapes me. A restaurant named Pesce was also across the river, and had a nice selection.
Rooms are (if you reserve far enough in advance) about $160 a night.

The Omni La Mansion is very Nice, but I like the St Anthony, more historic and very nice.

How about the Sheraton Gunter? Across from the gorgeous Majestic theater. The hotel is exquisite. It is beautiful, full of history and on the river. You can still get a room as low as $159 plus tax which is less than $200 a night. I stayed at a hotel next to the courthouse which was way less pretty and way more expensive. My view was the courthouse which quite honestly was a little depressing knowing what they do there. At the Sheraton Gunter there are beautiful views and there's even a ghost on one of the floors. She's a maid in early 1900 clothing that comes and cleans. She was killed somehow and doesn't realize her job isn't done yet. How cool is that? Think your boyfriend might enjoy you knew that? You can look it up in the Spirits of San Antonio book. but, don't ask the management, they don't like to admit there might be a ghost. Too afraid of losing customers.

Check out the Drury Inn for value (free drinks in evenings and good hot breakfast, 1 hour free long distance daily!) or the Amersuites are both good deals.
Check out the historic Menger Hotel for a little more ambiance and lots of stories to tell.
