In most cases about the consistency of pancake batter. It depends on the setting, and in some cases slightly thinner. It's also a good idea to add 1 gallon of a good (poly vinyl acrylic) primer to 5 gallons of compound if you are using straight joint compound.
It is a good idea to practice on a piece of scrap before going at it.

I personally like the consistency of mashed potato, but dislike texuring in general principals. I assume you are talking about Knock Down?
I'm old school, and no offense at all. It can be a decent look, but also can create years of maintenance in cleaning issues, possible patching, and painting or touch ups.

MOST HOPPER HAVE NUMEROUS HOLES BASED OF THE LOOK DESIRED. ALSO THE MUD THICHNESS HAS SOMETHING TO DO WITH IT.
