Funny you should ask this, I was totally thinking about this on the weekend! I like mozzarella, colbyjack, pepper jack, Cheddar, American, Italian cheese, provolone, cream cheese and bacon cheese from the can with the Ritz crackers! mmmmm..... Okay so maybe I like all kinds except Swiss, and Parmesan!

I like all kinds. Except for this one kind that tasted strange to me. But some of my favorites are provolone, mozzerella, cheddar, and gouda.

real Italian Bufalo Mozzarella. And Havarti isn't American, doh! that's Danish!!!! Brie and Camembert is superb if eaten in France, room temperature. With some great bread, wine and fruit. Bla Gotland is likewise scrumptious, yet very complicated to acquire!

I love all cheese (I'm French) as long as they taste something (not some of the bland American cheeses out there, just good enough to be buried in sandwiches).
My favorite is Fol Epi (hard to find) with its light, fruity, nutty taste (it's like an emmental but nuttier).
It enhances any red wine.

Provolone is good, too, but my absolute favorite has to be a good smoked Gouda.

I'm pretty sure it's called Colby Jack...The yellow and white cheese mixed. It's my favorite kind of cheese, and the only one I actually like. I don't really like cheese...
