Is it a good idea to go on a one week holiday with family to Portugal/Spain in December around christmas? How will be weather conditions?. I heard that these places are only summer destinations and hibernates in winter...Pls advice

Of course it's a good idea... especially if you want to go to Madeira or the southern bit of Portugal. You might not be able to swim every day but there will be days (if you are brave enough) you will be able to swim, especially if you're used to cooler conditions.

If you want to go to places like Porto, you can't exactly go and expect a lot of sunshine. The Algarve (southern Portugal) is still warm during the winter though. It can actually get very warm during the winter in Faro (Algarve).

So if you go to the Algarve during the winter time, it's perfect actually. Just be prepared for rain some days.

It would be better if you advised where you are going. The weather in Portugal varies a lot from North to South, East to West. There are some towns (Algarve and Alentejo region) that seem to hibernate outside summer season, however big cities like Porto, Lisboa, Aveiro, Guimaraes, Braga, Coimbra, Viseu, etc are operational all year long.
Please add some more details, where you are planning to go, then I'll be able to provide the information you need.

EDIT:
It will be chaotic to walk or drive in big towns before Xmas, because everybody is doing their shopping.
Bear in mind that on the 25th, 26th of December nothing is open in Portugal. And in Spain as they are more religious than we are, it is even worse.

Visit the cities, not the beaches. You'll have a great time - except during the actual holidays, when everything is closed so families can spend time together.

February to April is probably bes time to visit Portugal

If you don't mind not going to the beach, they are perfectly good holiday destinations. You'll just have to pack warmer clothes and the ocasional umbrella. But it hasn't rained much in the last years.

We were there last November, days were ok few showers, but it went dark for 5pm, was cold and threw it down all week, luckily we had good hotel facilities
