I consider myself to be, even now, as it is, in that state of ''not knowing', and I am not afraid. Bewildered yes, but not afraid.
As to knowing too much; it is possible for some one to know what is important to know regarding a particular matter or sujbect or field of investigation. This is knowing enough, that is, knowing the subject. It is impossible (and unnecessary, at that) to know everything, let alone too much.
The danger lies if one comes to the stage where one starts thinking that one knows everything, or where one's mental faculties just cannot cope with the load of data being inputted into the brain. It is here that one gets the IMPRESSION that one knows too much.

It's a catch22 for me. I want to know everything but am rarely satisfied with what I learn. But really, I think I'm afraid of not knowing something as oppose to knowing too much. But that's just me...

since you asked this question, you are suposedly more afraid of not knowing...
it is impossible to know too much, unless you are unable to bear the burden of what you know. that would mean you are afraid.
it is almost natural to be afraid of not knowing, because it can be dangerous and even life-threatening. but taking religion as an example, a whole lot of people is not afraid to decline scientific proof that "knowing" God is impossible, because He doesn't exist. they WANT not to know.
in general, fear is the enemy, not knowledge. additionally, we can more effectively and easily choose what we want to fear than what we want to know. that's why "ignorance is bliss", and not "bliss is ignorance".

Afraid? No, I rejoice in the fact that I don't "know it all", and there is so much more to learn. Discovering new things, new friends, new ideas, is what Life is all about.

You never become uneasy by 'not knowing' so many things but you get afraid by 'not knowing' only a few.
Ignorance is always a bliss, sometimes not.
