By measuring the wavelength(s) of light emitted at the surface of the Sun. In the same way that a metal begins to glow as it's heated, all materials will begin to give of various wavelengths of light and the 'wavelength signature' for various elements is called the 'spectrum' for that element. Since these can be measured in laboratory conditions on Earth, they are quite well known and allow both the temperature of the Sun and it's composition to be measured. It's also possible (using this information) to measure the temperature and composition of any of the stars.
