Hmmm.... with the chance to get creative....
Maybe have the building divided up, each area representing a major region (ie Woodlands, Plains, etc). Maybe paint the walls in a good representation of each region.
Not sure what decor would fit, or be appropriate to use, for each, but maybe a part of it could feature works by Indian artists (placed in the appropriate section of the restaurant), and it would rotate so after a while it would be replaced with new pieces. (Giving artists exposure, and maybe even attracting buyers once the piece would be done with it's term on display.)
The menu, maybe also divide it up into major regions and feature foods that come primarily from tribes of those regions. Also a section for common modern things like the fry bread.
Done right, something like that could be fun.

I would expect to see wild game dishes, particularly venison and bison. I would assume dishes containing corn, tomato, beans, squash, and wild rice. However, there are probably great variations within the different tribal communities of which I am not aware.
I think the Native American restaurant in the National Museum of the American Indian has done a pretty good job of introducing some authentic dishes.
As for the decor, I think it would depend upon the tribal affiliation(s) of the owner(s). But I would hope it would be traditional and authentic - like the food.

First item on the menu: Fry Bread
Then Corn, tortillas, deer meat, salmon, acorn soup, fried squash blossoms. pine nuts, pumpkin soup. I would travel a long way to patronize that restaurant if I could find one. Decorate it with Indian artifacts like grinding stones, baskets, cave art, scrimshaw, deer hides, paintings, dream catchers and a small shop selling Indian art, jewelry and clothes. If I were Indian I'd help you run it, but you would never trust the white eyes. If you are planning a restaurant please do it my friend.

why do no longer you're making it your self? here, i will provide you a tried and authentic indin recipe: six cups flour with a million cup sugar and a million/2 teaspoon baking powder (or much less, i'm guestimating, regardless of equates to approximately 2 pinches of the stuff from my arms) and a teaspoon of salt. mixture all those issues at the same time in a bowl and set aside.. in an more desirable bowl, mixture 2 eggs with one cup water, one cup milk (or 2 cups water, 2 cups milk) and stirr in dry components. If dough is in basic terms too dry, upload extra milk/water. If its too moist, upload extra flour. placed flour on your arms and gently knead the dough (you do no longer pick it too complicated, then it does not fluff nicely) and make around disks as huge as you like and a few million/2 an inch thick (or thicker in case you pick) with a hollow in the very center of it. on the range, warmth a large pan of oil (a minimum of three inches deep) or use a deep fryer over medium warmth. place a small quantity of dough in it. while it will boost to the best and gently bubbles, its heat adequate. make valuable your oil does not get too warm. place dough disks in oil with tongs (the oil splashes, so be cautious) and wait till the middle hollow is exhibiting slightly golden hughe around its eges, then turn over. wait till that area is completed frying, and voila! you have actual indian fry bread. good with something from butter and powdered sugar to Chili and toatoes. Its like a crepe in the way that that is a dessert or a significant dish.
