Originally it stood for New Obsolete Stock. Somewhere along the way people started saying New Old Stock, which just sounds stupid, or New Original Stock which sounds dumb too.

Anyway, it means parts (or whatever it is) that have been sitting in a warehouse or somewhere for a while since they were common, but now are considered obsolete. Usually something that isn't made anymore and hard to find.
