There are certain people that lack the capacity to consent such as mentally defective or physically helpless persons. It is always illegal to take advantage of these people, no matter how old you or they are. The question is always whether the individual has the capacity to consent. Sex that lacks the consent of a participant is usually considered to be some type of sexual offense. Individuals who have been statutorilly designated as lacking the ability to consent have not consented even if they overtly state that they have.
Further, the nature of some relationships makes sexual contact unlawful because of the imbalance of power. Examples of these relationships are as follows:
Therapist Client
Doctor Patient
Lawyer Client
Pastor Paritioner
This is certainly not intended to be an exhaustive list.
Finally, incest is still illegal in most states.

In some states, the age of consent is 16, however if a 16 year old were to have sex with a 35 year old, that would be considered statutory (excuse my spelling) rape and the parents of the 16 year old would probably try to put the 35 year old in jail. Once you reach 18, you are a LEGAL ADULT and can have sex with whomever you want.

Almost. There are exceptions;
Incest is always illegal, and
Sex with vulnerable adults is illegal, as in patients who are incapacitated, or incapable of legal consent.
There may be other restrictions too. Check local jurisdiction laws. There used to be laws against homosexual sex between people who are otherwise of age, but the supreme court struck those down as unconstitutional.

18 or 80 makes no difference. if the 2 (or more) people involved are at least 18, age doesn't matter.
assuming the persons are willing and of legal mental status to consent that is (i.e. not legally declared mentally retarded, incapacitated, etc)
