I mean, they have 31 flavors, all of which I probably never saw before.
But , whenever I go in, the help comes right up and asks, "May I help you?", when they must know I've never seen any of the flavors before, and will have no idea what I want, until I look around some.
Then they get peevish when I say that I don't know...

They are under pressure to work as quickly as possible and when you say that you don't know, you might be slowing them down. Next time, just say, "I'm still deciding; please feel free to take care of someone else and to come back to me in a couple of minutes." In the workaday world, ppl have to move along a little faster (even in Baskin Robbins). I myself as a consumer am also pressed for time and as I am walking to the counter, my eyes are scanning the choices. This isn't rocket science, it's picking a flavor of ice cream so if I see one flavor that pleases me, I pick it. There's no need to "elect" one flavor out of the 31 candidates. If I don't go over all 31 candidates, no prob. I can try the other ones later.

You need to get out a bit more often.
If you have never seen most of their 31 flavors, you've lived a very sheltered life. While some of their trademarked flavors might be momentarily confusing, there should be nothing unfamiliar with chocolate, vanilla, mint chocolate chip, french vanilla, chocolate chip cookie dough or rocky road. Flavors such as Reese's Peanut Butter Cup, Pralines 'n Cream and Very Berry Strawberry should be self evident.
Perhaps you could spend a few minutes on the BK website to familiarize yourself with their standard flavors before visiting the restaurant. Then you won't feel so intimidated.
Either that or take $50 with you and ask for a junior scoop of each flavor!

Do what I do . . . ask for a taste of all of them (I believe they still have those tiny free taste spoons) . . . by the time you've tried them all, you're full, the employee is irritated and you're prepared for the next rendezvous with those Baskin Robbins fiends . . . until you find out those 31 flavors change every so often. AAAaaarggggghhhhh!!
Or you can study the list on the link and go in educated and informed and ready to make that big decision.

Back in the day, I worked in sales for five years. It's pretty much the same thing no matter what part of sales you work in. The suits in charge want you to be aggressive yet friendly, and get the customer what they want quickly so they can make the sale. So greeting you, and high pressure tatics are the norm. When you don't know what you want, it stops them from moving onto the next customer, and getting their money. By all means, take your time and that way you get what you want.

Some people are like that. You know, personality issues. Just look them in the eye and say, "Hold on, let me see the flavors" and if they get frustrated, or groan, or whatever, just walk out of their shop. Simple as that.
