The term used by people that raise horses is "rearing".
The same term is used for any four-legged animal standing on its hind legs (though most wouldn't say a squirrel is rearing when he stands on his hind legs).
There may be some official definition that only applies "rearing" to hoofed animals (such as horses, goats, cows, etc.)

It is still a horse just as a man who is standing upside down is still a man. It is referred to as 'rearing' (as already answered by another colleague here), where the word is an adjective (just as saying a white horse).

The horse is rearing [up]. There may be other technical terms, but this one is the one everybody knows.

Rearing..everybody has that but it is also called dancing in dressage.
