apprenticeships dont really apply to this profession its more a university style education for this type of work

I think architecture is a great idea, but you would need to give us an idea of where you are located in order for people to be helpful. Since you mention a-levels, you are obviously in a country which follows the British system, but it is not clear if you are in the UK or elsewhere, and since some countries are more likely to accept apprenticeships than are others, it does make a difference.

The only way you can become an Architect is to earn a Bachelors in Architecture. After, you receive your degree you're not considered an Architect, until you are licensed. You become licensed by working for an Architect for atleast 3 years. Then, taking a state exam for your license.

Since you need to be accredited to be an architect in the UK, your best bet is to go through whatever university you go to. They'll almost definately include some kind of system to help you get accredited once you have your degree.
In terms of A-levels, you'll need maths, physics would probably be a good idea too. Best of luck!
