Took an online coursed Ap US history when I was a junior, but didnt take the exam since my school doesnt offer it and Im now currently taking Ap Econ on my senior year. My SAT is 1600 ( 550 on verbal, 550 on math and 500 on writing. What is the chance of me getting into CSU Long Beach??

The AP courses don't play much of a role in college admissions decisions, but your GPA and SAT scores seem to fit into the mid-range of their current students, so you have a decent chance of getting in. You haven't mentioned the TOEFL, though, which will also be necessary for you to be admitted as an international student.

None of the CSU schools are very selective (or highly regarded). Your GPA is about average for CSU-LB and your SAT scores put you above average.

You can probably do better.
