If the whole stalk is dead and wilting or blackening then the plant as a whole is done. Some types of sunflowers have multiple flowers but they will not produce another one if you remove one. So if they are dead, the main plant then rip them out and you can plant more. The sunflower seeds can be roasted for a short time on a cookie sheet in the oven. Then they will be dryed and ready to eat.

It all depends on what variety of sunflowers you are growing. Most sunflowers are annuals, meaning they grow, bloom and die within 1 growing season. Some varieties produce just 1 flower, while others will have several flowers per plant. If you are growing the 1 flower variety (i.e. the very tall and large sunflower) and it is dying back, that would be it for the season.

Some varieties that have several series of flowers on then can be deadheaded (i.e. cutting off the wilting flowers). This will sometimes make the plant produce more flowers. But this method will not work if all the blooms on the plant are dying back at the same time.

Sunflowers can go to seed and if you just leave them alone to die back, the seeds will naturally dry and fall off the flower to ground and the growing cycle starts again. I have had sunflowers "come back" for several years with this technique.

As for roasting the seeds, you will need to dry the flower head. The seeds will then come off and you can roast them. Here's a link that discusses sunflowers and roasting them - http://www.gardenguides.com/how-to/tipstechniques/fruitnuts/sunflowerseeds.asp

Roasting them is easy, just lay them out on a sheet pan and put in a warm oven (lowest setting) and turn them ever so often.(we just put ours in a pillow case and hang it in a warm closet for awhile ,shaking it once a week, then eat them. As for will more come back that is a 50/50 chance, as some of the seeds do fall to the ground and regrow.

dont need to dry the seeds, in some countries you can buy whole sunflower heads to eat the seeds raw (just slightly press and a seed will pop out). it is fun and very addictive
