I imagine the two names have the same root, but ease of spelling seems about the same to me. If it's your name, you're going to learn to spell either one. Maybe if your name were Ed instead of Oedipus this might be an issue.
Changing the spelling changes the name in spite of the origin, though. It gives the name a different feel and a different character.

Not easier, just a variant spelling of the same name. "Geoffrey" is older (as you'd expect), and is a Norman form of a German name. "Jeffrey" appeared in the Middle Ages, at a time when spelling of words (in this country, at any rate) were in a state of flux.

Both names are correct. They just have different spellings as do so many names today.
One can almost make up their own spelling when naming their child .

It is a name, there are loads of ways of spelling names.
when i was pregnant with my daughter i wanted to call her Alisha but then found the name Elysia which means blissful sweetness so that is her name but still pronounced Alisha
