You really should try "trick-training". My daughter has done this, and the horses love it. They respond very well, as long as you are patient with them. Apparantly, it is a nice break for a horse, who is so accustomed to a rider just being on their back. With trick-training, you are at ground level with the horse, and you are asking it to do things it never did, before. This seems to use a different part of the horse's brain, and you might find your horses waiting at the gate for you, if you really get into it. My daughter has even taught her horse how to "sit down" in the sawdust pile. He looks so silly. It is also good for ground manners. You just have to be patient and do all the training in very small increments - don't expect anything all at once, but just little steps at a time with breaks in-between. Get a book, look online, or email me and my dauaghter will send lots of tips and hints. Try some games on horseback. too.

Teach them tricks, like bowing, laying down on their back with all four up (playing dead), Sit down, roll over.
Teaching a horse to play soccer is fun too, or just to manipuilate a ball around and arena. if you have a smart horse thats agreeable trick training can be very fun for the horse and the trainer

why don't you do some mounted games? it's fun, furious, and... well, loads of fun for the horses and riders!! lol!! you could go to gymkhanas and get a load of rossettes (although, might be a bit wierd if your an adult against a load of kids!!)
or why don't you do some horse ball, or polocrosse, or polo? they're loads of fun too!
or how about (like some people before me have said) practise some dressage, get them doing some tricky movements like canter pirouettes and stuff?
or why don't you just go to a load of shows and show off your amazingly talented horses?
or why not bombproof them? take them to scary places where any other horse would complelely freak? train them like the metropolitan police horses, who jump through rings of fire, let someone open an umbrella whilst on them, stand still during riots! (not for the faint hearted, it must be said!! lol!!)
you can do loads of stuff!!! lol! =D hope i gave you some ideas!! =D

How about trick horses? Teach them how to rear, "shake hands", stand on stuff, and do all sorts of tricks!! Trick horses are very fun to watch, and I always admire the perseverance of the trainers.
You could also teach them to pull a cart. I thought it would be fun to teach a horse that so you can go into town, joy rides, etc. So maybe you could teach your horses to pull you in a cart!!
Have you ever tried barrel racing?? My friend says it's fun, but I don't want to try it. Maybe you could teach your horses barrel racing!!! I've seen horses do it, and they look like they are having a ball.

You could try something in the dressage discipline maybe? Depends what your horse is like, Practise your half-halts, Practise Haunches-In, Fixing falling in if he falls in etc, or if hes a rushy horse you could practise on slowing him down as dressage judges hate rushing. It depends on what you and your horse like to do.
