Not sure how many pounds of luggage you plan to take, but this is what I did when I moved to the Czech Republic a few years ago.
Leave your hair dryer and curling iron at home. They have different plugs and wattage, so you'll need to but new ones.
Bring a surge protector (Radio Shack) for your laptop. Some building are old, with dodgy wiring. Shampoo, conditioner, lotion is the same quality as in the US, they have sunsilk and garnier and all that. You might want to leave it as it's heavy in your bags.
If you wear high end makeup, bring it. Hard to find and pricey.
Bring some of your favorite clothes, but you might end up buying some there, especially if you live in a city. Eastern Europeans are surprisingly stylish. You may want to get a pair of American quality winter boots before you go, shoes tend to be flimsy in construction. Also, high heels that aren't the chunky kind get broken down really easily and get stuck in cobblestones, lol!
This one is weird, but if you're picky about pillows, bring your own. They're sorta small and flat there.
And of course pictures, a few favorite nic-nacs and stuff to remind you of home.
Hope this was of help!
Enjoy Poland, I know I had a blast during my time in Europe!

Take personal things.
Like pictures and reminders of your loved ones.
Bring a couple of cd's filled with the music you like, (or put them on DVD.)
If you have a brand of shoes you like very much, bring some new pairs with you, as brands will be different.
Do not worry about clothes, the choices there will be as good, if maybe a bit different.
Jeans will be different brands and might cost more, but I am not sure about that, but tops, sweaters and nice clothes are likely to be cheaper.
You will be going to miss certain foodstuffs, but which is hard to predict.
A lot of favorites are for sale in Europe too, but everybody is going to miss something.
That will be nice presents for friends or family to send or bring when they come visit.

The electricity is different. Some appliances will not work correctly even with a transformer because the cycles are different too. For example, a plug in American clock will lose time unless it has a setting for 50 cycles. (We use 60 here in the states) This website might make this a little clearer.
