IMO the best way to go about getting a good job in LV is to start in another state, where they will teach you all of the games for free.
The best game to learn is craps, next is poker, then roulette and blackjack.
Most casinos will start you out by teaching you the game of blackjack since it's the easiest to learn. This will "generally" take 4 ro 6 weeks.
Once you're on the floor and gain a little experience, they will offer you the chance to take the more advanced games.
With one year experience dealing craps you will have no trouble getting a job in Las Vegas. Two or three years, depending on how quickly you pick things up and you should be able to land a job at a major strip casino.
Craps dealers(good ones) are in high demand.
Blackjack dealers are the least in demand, but if you can also deal the major "carnival" games that's to your advantage. If you have 6 months to 1 year experience dealing blackjack and a good work record you should be able to get on with one of the locals casinos in some capacity. You might have to start with part time, but if you're good, you will be working full time in no time at all.
