You can use a keylogger that records all keystrokes. Takes snapshots of emails and records Instant messenger chats. However you should be careful when choosing a keylogger. A lot of them are not worth your time. Here is a site that tells you what features to look for and which keylogger is safe.

yeah get a keylogger, but remember its still privacy you are breaching in this case and stealing passwords to get into email addresses etc is really suck
