More or less all of them. The nice thing is that most animals have the same body parts and treatments.
For example there are many species of exotic cats, they live all over the world and come in many different shapes and sizes. HOWEVER when it comes right down to it they are more or less exactly the same.
So, do you need to know EVERYTHING about tigers, lions, cougars, jaguars, fishing cats, snow leopards, blah blah blah. No, you do not, but you do need to have a general knowledge about exotic felines.
Still there are exotic vets that focus on certain groups, ie - reptiles, primates, aquatics, etc.

This might depend on if you want to specialize in an exotic species or do more generalized studies. There is A LOT of information out there. For some more ideas you might look at the zoo veterinian profession. A great website to learn more is the Association of Zoos and aquariums (AZA).
Also, if you have the opportunity to interview or talk to a zoo vet or staff person they might beable to provide some additional ideas!

rabbits are considered "exotic" pets
i'm thinking there is a general body of knowledge that one must learn to become a dvm...and from there they specilize.
