most carbohydrates would be called complex. the simple carbohydrate is the exception.
cardohydrates are made up of chains of sugars or 'saccarides'. there are many kinds of saccharides and a few different ways they can join together.
a simple carbohydrate is a molecule with only one or two saccharides (monosaccharide or diasaccharide).
a complex carb has 3 or more (up to thousands) in the chain.
