Say a transaction arrives destined for my account on a saturday - will it be processed by the bank on the saturday night?

No, there's nobody there to do it until Monday. If it arrives it won't be creditted to your account until Monday.

No they're all out partying! No seriously I've known money to clear in bank accounts before on a Sunday, when the money's not been there on a Friday or Saturday.

Transactions are processed, internally, on the next business day. Generally, the following Monday; unless that date is a holiday. Receipts are dated accordingly.
