A fart is caused by a buildup of gasses in the digestive system. Our body is unable to break down certain types of foods by itself and so it relies on the bacteria in the intestines to break it down for it. The bacteria break down the food for their own use as well, and the process produces waste gas which becomes farts.
Different types of foods produce different byproduct wastes. High levels of proteins, such as from eating meat and eggs, produces gasses high in sulfuric gasses which causes an increase in smell, in other words, silent but deadly. Diets high in fiber, such as salads or beans, produce more gas but with less sulfer, leading to louder, but not as smelly, farts.

You can get litmus paper and analaze the acidity of a fart and then determine if it is a hydroxide or (OH-) ion causing the stink and/or decibel level of the exiting gas cloud.
